Make Cabbage Soup Taste Better

Cabbage soup consisting of boiled cabbage with salt pork or colcannon is a traditional Irish food served during St. Patrick's Day. Now, cabbage soup cooked in various ways and with different ingredients, has become one of the favorite dish of families around the world. Different cabbage soup preparations have evolved through the years as homemakers and chefs try to experiment with the ingredients. But the secret to best-tasting soup is in the selection of cabbage itself. Cabbage tastes best when it is in season, of smaller variety and fresh.


Instructions








1. Pour and heat the olive oil in the pan. Cover the pan. Sweat the vegetables over medium heat for about five minutes until vegetables turn soft but not brown.


2. Add the onions, cabbage, leeks and potatoes. Stir to combine all vegetables. Add the tomatoes and season to taste.Let it cook for two minutes.


3. Pour in the wine. Wait until only a half of the wine is left then add the stock or water. Bring to a boil.Simmer for 15 minutes until vegetables are tender and the liquid has thickened.
