Garlic Powder
Garlic powder is a staple of venison jerky recipes. One teaspoon can be added to two to five pounds of ground meat, depending on your affection for the flavor and the other spices that you plan to use. In general, whatever spices you choose, add a teaspoon of each to balance the flavors. Use more of one spice if you want that flavor to stand out.
Pepper
Pepper can give depth of flavor and a heat to your jerky. Use a combination of white and cayenne for a jerky with a spice kick, or simply use ground black pepper if another spice is to be the star. Different peppers will add a slightly different flavor note to your jerky. For a mild difference, substitute lemon pepper for plain or white pepper in your favorite jerky recipe, or kick up the heat considerably using ground cayenne and red pepper mixed with one teaspoon of chili powder.
