Roll Salami & Cheese

Salami and cheese make a delicious snack or appetizer.

Inexpensive and easy to make, salami and cheese is a light, tasty appetizer or snack. To add a little extra panache to your presentation, roll the salami and cheese together. Lightly rolled salami and cheese makes loose rosettes that are as pretty as they are delicious, while tightly rolled salami is portable and mess-free. Avoid hard cheeses and salami, opting instead for softer options. In no time, you can whip up a plate of attractive appetizers for any unexpected guests.

Instructions

1. Choose salami and cheeses that are pliable enough to be rolled. The softer the food, the better. For salami, try genoa, soppresatta or mortadella, which are available at many supermarket delis or butcher shops. Packaged salami also works for this preparation. Soft, white cheeses, such as provolone and pepperjack roll well in salami, as does colby jack. Cream cheese also makes a delicious rolled salami filling.

2. Place a slice of salami on a cutting board or plate. Place a slice of cheese in the center of the salami, aligning it as much as possible with the edges. For cream cheese, spread approximately 1/2 tbsp. evenly on the salami slice.

3. Start at one edge of the salami and roll it into a small log. The cheese will be swirled inside the salami. If your rolls are not holding their shape, place a toothpick through the center of the roll, puncturing all layers of salami and cheese.

4. Add chopped olives or slices of pepperocini to your rolls for a little extra flavor and kick. Sprinkle a small amount of these toppings on top of the cheese before rolling the salami. This works especially well with soft cream cheese.
