White bean chili has a smoother and more mild consistency than traditional red chili. Chopped green chilies give the stew a little kick, while the other spices help mellow out the flavor. Instructions
1. Heat the butter slowly in your stock pot until it melts. Add minced garlic and diced onion and stir over low heat. Add chopped green chilies and cook for an additional five minutes.

3. Cook the cubed chicken breasts or ground turkey in a frying pan, until the poultry is cooked through. Immediately transfer the chicken or turkey to the stock pot.
4. Make your own chili powder with the cumin, oregano, black pepper, salt and red pepper flakes. Combine equal parts in a small bowl, adding or removing spices you like or don't like. Add the seasoning to the chili.
5. Pour the chicken broth over the mixture and stir to combine. Set the heat to medium and cook for at least an hour. Just before removing the chili from the heat, sprinkle fresh chopped cilantro over the top and add the juice from one lime.
