Arugula greens are a leafy vegetable popular in salads and Mediterranean cooking. A member of the mustard family, arugula has a peppery taste that adds a new dimension of taste to not only salads, but also pizza, pasta dishes and breads. Also known as Garden Rocket, the plant is easy to grow indoors and requires very little care. Arugula is high in Vitamin C and potassium and can be used in any recipe calling for basil.
Instructions
1. Prepare your growing container by filling the pot with potting soil. You should use at least a 4-inch-high pot and fill with soil to approximately 1/2 inch from the top of the container.
2. Sprinkle arugula seeds thinly over the top of the potting soil. You should have about a 1/2 inch of space between each seed.
3. Cover the seeds with 1/8 inch of potting soil.
4. Water the container until the soil is moist to the touch.
5. Set the container in a sunny window. Arugula grows best in cooler temperatures, so you may want to choose a window on the north or east side of your home where the hot midday sun does not shine directly on the plants.
6. Thin the sprouts to approximately 2 inches apart after they have germinated and formed their first leaves.
7. Begin harvesting the arugula greens when they reach 2 inches or more in length. Arugula greens fully mature in about 40 days.
