Make Australian Cheesecake
1. Preheat the oven to 350F degrees for crust, if you would like a crisp crust.
2. Put butter in the small pot. Add sugar and melt together.
3. Place the crumbs in the 8-inch springform pan. Pour the melted butter mixture in, and smooth it wellover the bottom of the pan. Bake for 10 minutes, if you prefer to bake it. Set the crust aside to cool.
4. Turn down the oven to 300F degrees. In large mixing bowl, beat the cream cheese and sugar together until fluffy. Add egg yolks and continue to beat well.
5. Add flour, lemon juice, lemon rind, and vanilla. Continue mixing well.
6. Whip the cream in a medium bowl and set aside. In another bowl, beat the egg whites until they form stiff peaks. Add the cheese mixture. Fold in the reserved whipped cream, and add the passion fruit pulp. Mix well.
7. Pour the mixture onto the crust and bake 45 minutes to 1 hour. Cool and refrigerate.
