Instructions
1. Chop the onion and peel and dice the potato. Heat one tablespoon of the oil in the skillet over medium heat.
2. Add the onions, and saut themuntil they are soft and caramelized. Remove the skillet from the heat and empty the onions from the pan onto the dish.
3. Heat the remaining tablespoon of oil in the skillet. Add the potatoes to the skillet in an even layer. Season the potatoes with the salt and pepper.
4. Cook the potatoes six or seven minutes, or until they start to brown on the bottom. Shake the pan while cooking to prevent the potatoes from sticking.
5. Place the onions back in the pan and use the spatula to press the potatoes into a pancake. Remove the hash browns from the pan with the spatula or a slotted spoon. Place on a plate lined with paper towels to remove the excess oil. Discard the paper towels, add additional salt and pepper, if desired, and serve hot.
