Make Gumbo







Gumbo is a traditional Creole-Cajun dish that hails from Louisiana. There are an almost infinite number of variations on the dish, and it's said that no two pots of gumbo ever turn out the same, even if made using the same recipe. Whether or not that's true, they all taste delicious!


Instructions


1. Cut the sausage into chunks and dice the vegetables.


2. Heat the oil in a shallow pan.


3. Add 3 to 4 tsp of flour, 1 tsp at a time. Stir to mix after each addition.


4. Cook until the mixture is a dark glossy brown.


5. Remove from the heat.


6. Add the vegetables then stir to mix.








7. Add the seasonings and mix again. Set the pan aside.


8. Add the liquid ingredients to a pan and heat until boiling.


9. Add the vegetable mixture, a spoonful at a time. Stir to mix thoroughly between each spoonful.


10. Add the garlic and sausage.


11. Let it simmer for 10 minutes.


12. Add the shrimp


13. Cook for 3 to 4 minutes and stir occasionally.


14. Remove the bay leaf.


15. Serve over rice and garnish with green onions.
