Jalapeno peppers are used in a lot of recipes, including the classic jalapeno poppers. Jalapeno peppers are also added to burrito and enchilada mixtures and they're used to make hot salsas. Instructions
1. Wash the peppers in warm water. Make sure they are clean of all dust and dirt. Let them air dry.
2. Cut the stem end off of each individual jalapeno. On a cutting board, cut it about 1 inch down from the top of the pepper and dispose of the tops.
3. Slice each jalapeno in half long ways. Clean out all of the seeds and dispose of them. If you are making jalapeno poppers, only cut a slit into the side of the jalapeno and clean out the seeds.
4. Lay each slice of pepper side by side and cut them into small pieces all at once using a large sharp knife.
5. Dice the small pieces of jalapeno peppers into even smaller pieces. When you are finished dicing the peppers, place them in a bowl until you are ready to use them.
