Fry Sweetpotato Spears







Sweet potatos are rich in vitamins A and C.


Sweet-potato spears can be either pan fried or deep fried, depending on your personal taste. The best sweet potatoes for frying are firm and fresh, with orange flesh and deep brown skin. The potatoes should be blanched prior to frying for the best taste. This is done by boiling the potatoes for several minutes after slicing them.


Instructions


1. Wash and peel the sweet potatoes. Cut the potatoes lengthwise into spears.








2. Prepare the oil in a saucepan for deep frying or a skillet for pan frying. Bring a pot of water to a boil.


3. Place the sweet-potato spears into the pot of boiling water. Blanch them for 4 minutes, then transfer them to paper towels to dry off excess water before frying.


4. Place the sliced, blanched sweet-potato spears into the hot cooking oil a few at a time. If pan frying, turn the potato spears occasionally using the slotted spoon to prevent burning. For deep frying, watch the potato spears until they have finished cooking. Cooking times will vary depending on the thickness of the spears.


5. Spoon the cooked sweet-potato spears out of the hot oil with the slotted spoon and place them to cool on paper towels.
