Make Vegetarian Broccoli Soup


Vegetarian broccoli soup is typically made from a cream base with other vegetables and spices used to enhance flavor. Some of the most common additions include crushed tarragon and mushrooms. This recipe yields approximately 6 to 8 servings of vegetarian broccoli soup, which can be easily modified for vegan diets if necessary.


Instructions


1. Fill a large stock pot with water and bring to a boil over medium-high heat. Add the broccoli florets and boil for 4 to 5 minutes or until tender but firm. Drain the excess water and set the broccoli aside.








2. Wipe the mushrooms clean with a damp cloth. Do not place them under running water or submerge them, as they will absorb the water and become spongy in texture. Slice thinly and set aside.


3. Melt the butter in a large stock pot over medium heat. Add the flour by sprinkling in a handful at a time while stirring constantly with a wire whisk. The resulting sauce is known as a roux, which is used to thicken the soup.


4. Add the vegetable broth to the roux by pouring it in a constant stream and whisking constantly. Bring the mixture to a rolling boil over medium-high heat, and then reduce the heat to medium-low.


5. Add the broccoli florets, mushrooms, milk and tarragon. Simmer the soup for 10 to 15 minutes or until heated through, but do not allow it to come to a boil. Remove from the heat and add salt and pepper to taste. Serve immediately.
