Fry Potatoes In A Cast Iron Skillet







A cast iron skillet is a time honored way to prepare fried potatoes. Potatoes fried in a cast iron skillet turn out crisp on the outside and soft on the inside. Potatoes can be sliced or cubed and the skins can be removed or left on. Because cast iron retains heat so well and because a well seasoned skilled has nonstick properties, only a small amount of oil is needed to fry the potatoes.


Instructions


1. Heat the skillet until hot over medium high heat. Add 2 tbsp. cooking oil to the skillet; continue to heat until the oil is hot.








2. Add the potatoes to the hot oil. Turn the potatoes with the slotted spatula to coat the potatoes evenly with the oil.


3. Turn the heat down to medium low. Cover the skillet with the proper size lid. If your skillet did not come with a lid, check to see if you have a Dutch oven or other stockpot lid that will fit.


4. Use the spatula to turn the potatoes in the skillet every 10 minutes until the potatoes are cooked through and are fork tender.


5. Remove the cover and turn the heat to medium high. Fry the potatoes, turning often, until they are golden brown on all sides.
