Yucca or cassava root is a tropical root vegetable grown in Africa, Asia, South America and the Caribbean. It is a valuable resource because it grows easily where other crops cannot. Its flavor ranges from bitter to sweet. Yucca root must be cooked in order to be eaten. The root is covered in wax to prolong freshness. The wax may seem difficult to remove, but it is quite soft. You cannot cook the root until the peel and wax are removed.

Peeling the Yucca Root
1. Cyanogenic Glycosides in the juice are a skin irritant. Wear the gloves while handling uncooked yucca. This will keep the uncooked juice from getting on your hands and causing irritation.
2. Cut the yucca root in half. Cut the end off each side. You should now have two ends that have identical larger sides and a smaller tapered side.
3. Place the yucca root middle side down so the tapered end faces up. Use the knife to peel off the skin with a downward cut. Continue around the root until the skin is removed. Repeat for the other half.
