Make Tabouli Salad







This recipe for tabouli salad is a great side dish for brunch, lunch or dinner. This would be great served along other Greek dishes for a theme dinner night. There are many health benefits to tabouli salad not to mention that it is low in fat and is cheap to make and will help to stretch the main dish. You can do the first two steps a few days ahead of time and finish the rest an hour before you serve the salad. This is also a vegetarian side dish you can pull out when you have a vegetarian friend coming to dinner.


Instructions








1. Combine the dry bulgur wheat with the boiling water in a medium to large size bowl. Cover and let dry bulgur wheat stand and absorb the hot water for 20-30 minutes until the wheat is tender.


2. Add garlic, lemon juice, and olive oil and mix well. Season to taste with salt and pepper. At this point you can cover and refrigerate for up to two days and finish the third step before you serve your tabouli salad.


3. Before it is time to serve finely dice the onion and seed and dice the tomatoes. Mix the tomato and onion with the dry bulger wheat mixture and toss in the mint and parsley. Serve cold with pita and other Greek foods.
