Cook Chitlings







Chitterlings, also referred to as chitlins, is a popular Southern soul food dish made from pig intestines. Chitterlings can be breaded and fried or incorporated with vegetables as a type of stew. During cooking, chitterlings give off a distinctive, pungent aroma that some people might find off-putting. For that reason, chitterlings were often prepared outside. Purchase chitterlings at specialty markets.


Instructions








1. Use a small kitchen brush to clean the chitterlings, wiping away any foreign matter. Rinse the chitterlings under the faucet three or four times to get the well rinsed. Cut the clean chitterlings into 1/2 inch pieces.


2. Place chitterlings in a large pot and add enough water to just cover the chitterlings. Add in one chopped onion, one chopped small potato, one teaspoon cider vinegar, two bay leaves, 1/4 cup chopped green pepper and one clove of minced garlic. Bring to a boil then reduce to a simmer and cook for three hours, or until the chitterlings are tender.


3. Stir into the pot, at the halfway point of cooking, 1/2 tsp. red pepper flakes and salt and pepper, to taste. Remove from heat when cooking has finished and serve chitterlings in bowls with a dash of hot sauce.
