Vegetable Stirfry With Hoisin Sauce







Add protein and flavor to your vegetable stir fry with tofu or seitan.


If you're looking for an Asian-inspired vegetarian dish, vegetable stir-fry with hoisin sauce and tofu is a blend of hearty vegetables and protein, without the meat. Packed with texture and flavor to tickle your taste buds, this dish is delicious by itself, with rice or with Asian noodles.


Instructions


1. Mix the 6 tbsp. of hoisin sauce, 2 tbsp. olive oil, 2 tbsp. soy sauce, 3 tbsp. apple-cider vinegar, 4 tbsp. apple sauce (used as a sugar substitute), 3 cups vegetable broth and minced garlic in a small pot. Place the pot on a burner over medium-high heat and stir occasionally.


2. Bring the mixture to a boil. Mix 3 tbsp. cornstarch with 3/4 cup of water and pour in the sauce mixture; blend well.








3. Reduce the heat, cover and simmer until the mixture thickens. Turn the heat off and set the sauce mixture aside to cool.


4. Pour 2 tbsp. olive oil into a large skillet. Stir-fry the tofu in olive oil until it is browned. Add 2 tbsp. of soy sauce and let it heat for 3 minutes, stirring frequently.


5. Add chopped green onions, red bell pepper strips, broccoli, corn and peas into the skillet with the tofu. Stir-fry the vegetables for 5 minutes.


6. Spoon the hoisin sauce mixture into the skillet with the tofu. Cook for 15 minutes, or until broccoli is soft and tender.


7. Toss chopped mushrooms into the stir-fry while the mixture is still hot. Serve over white or fried rice or chow mein noodles.
