Bake Cheese Scalloped Potatoes

Scalloped potatoes make a tasty side dish.

If you're looking for a dish to tickle party guests' or family members' taste buds, consider a piping hot serving of cheese scalloped potatoes. The rich and creamy potato dish is hearty enough to serve as a main course and versatile enough to accompany a variety of main courses, such as baked or fried fish, steak, pork chops and meat loaf. Tailor the scalloped potatoes to your liking by using your favorite cheese in the recipe.

Instructions

1. Create a sauce by melting 2 tbsp. of butter in a saucepan. Chop 2 green onions and saute them in the butter over medium-low heat. Pour in 2 tbsp. of all-purpose white flour and cook it, whisking constantly, until it thickens. Whisk in 1 1/2 cups of milk and blend it with the other ingredients until the mixture is thick. Add 1 cup of grated Parmesan, cheddar, Colby or Monterey Jack cheese to the saucepan and cook until it's melted. Sprinkle in salt and pepper to taste. Preheat an oven to 350 degrees Fahrenheit.

2. Wash, peel and thinly slice five large red potatoes.

3. Place one layer of potato slices into the baking dish and pour some of the cheese sauce evenly over the top. Continue layering the potato slices and the cheese sauce you have used all of the ingredients. Sprinkle 1/2 cup of crushed butter crackers over the top of the potatoes.

4. Bake the scalloped potatoes uncovered for 45 minutes to 1 hour, or until the potatoes are tender and the sauce is bubbly.
