Chicken, broccoli and sour cream make a great combination that can be incorporated into many different recipe ideas. You can easily add different flavors to the mix by adding other ingredients to create an appetizer, dip or main course. It is important to know that sour cream will curdle if you cook it at too high a heat or too rapidly.
Dips and Spreads
You can make several varieties of dips and sandwich spreads using chicken, broccoli and sour cream. Cooked, shredded chicken mixed with a combination of sour cream and mayonnaise with some chopped green onions, salt and pepper added makes a simple dip for broccoli crudites. If you cook chicken legs in the oven with barbecue or buffalo wing sauce then any dip you add it to will have an entirely different flavor. To incorporate raw or steamed broccoli into a dip or spread, chop it finely or shred it in a food processor.
Tacos
Sour cream is a classic topping for Mexican-style dishes like tacos. Although broccoli is not a traditional ingredient, if you slice it thinly and fry it with chicken strips it adds color, flavor and extra nutrients to the meal. You can add other toppings like cheese, lettuce, salsa and hot sauce as well as the sour cream for a quick and easy snack. Serve rice, beans and/or salad on the side to make a complete meal. Alternatively, use sour cream to make a more interesting topping by blending onions, cilantro, garlic, or chopped jalepenos into it.
Soup
A simple and delicious creamy chicken and broccoli soup makes a great lunch or dinner, and is a good way to use leftover cooked chicken. Start by sauteing some onions, garlic, chopped broccoli and any other vegetables that you wish to use, then cover the ingredients with good quality chicken stock. Add some cooked chicken, then gently simmer all the ingredients for about 20 minutes or until all the vegetables are soft. Allow the soup to cool slightly and blend it in a food processor if you want a smoother soup. Stir a few spoonfuls of sour cream into the slightly cooled soup, gently bring it back to the barely simmering point, then serve.
"Stroganoff"
A chicken and broccoli version of a classic stroganoff makes is a quick and tasty meal. Sauté chicken, onions, garlic and chopped broccoli in a little vegetable oil and stir frequently until they are cooked. Turn the heat down to low and add sour cream, tomato paste or ketchup, Worcestershire sauce and a dash of paprika. Bring the sauce up to a gentle simmer then serve the stroganoff over hot noodles or rice.
