Homemade carrot juice can be a nutritious and cheap weight loss tool. The pulp left after juicing the carrots in a home juicer does not need to be thrown away or composted. The mealy carrot pulp remaining after home juicing can be used to make a no-bake carrot cake, a healthy treat which nearly everyone can enjoy. The cake is low in calories, and free of the common allergens gluten, eggs and milk. The cake can also be easily modified into a vegan treat, if agave syrup is substituted for the honey.
Instructions

2. Empty the strainer into a large mixing bowl. Add the honey, raisins, walnuts, coconut and cinnamon. Stir until all ingredients are thoroughly combined. The mixture should be slightly crumbly.
3. Using the spatula, evenly distribute the cake mixture into the bundt pan. Firmly pack the mixture using your hands or the spatula. Cover with plastic wrap and chill overnight, or at least four hours.
4. Remove plastic wrap and carefully remove the cake from the pan. Slice and enjoy.
