Make a Burrito Bowl
Instead of indulging your diet and pocketbook by making a trip to Chipotle, make their famous burrito bowl at home. You get all the great flavor without the cost, and without some of the fat. Recipe serves 2.
Instructions
1. Rinse and dry chicken, and cut into small chunks.
2. Cook chicken in large skillet over medium-high heat for approximately 7 minutes. Allow chicken to cook throroughly, stirring often.
3. Add 3/4 cup of water to the chicken and stir in burrito mix. Bring to a boil and allow to simmer for at least 10 minutes.
4. Bring 1 cup of water to a boil and add 1/2 cup of rice. Follow instructions for the rice you buy as the measurements may differ.
5. Heat black beans in small pot over medium heat for 5 minutes.
6. Pile all the ingredients on top and serve! Use your discretion to determine amounts, but a healthy serving should include; 1/4 cup black beans, 1/4 cup rice, half the chicken, 2 tbsp. of salsa, 1 tbsp. sour cream, and pinch a handful of cheese and sprinkle on top.
