Make Bacon Pancakes







Bacon Pancakes were originally called Froize and sometimes are known as Fraize. This bacon pancake originated hundreds of years ago. See my other articles for cook bacon. If you are near a Renaissance Fair it may be fun to make these for breakfast.


Instructions


1. Prepare your ingredients. Cook your BACON first. A microwave bacon cooker is not cheating. The Presto microwave cooker is a way to make bacon just right. It takes little time to use the microwave and the results should be perfect every time. You could also use a Microwave Bacon Dish or even a plain ceramic plate. Just try to keep the bacon cooking evenly.


2. While bacon is staying warm, mix your batter. Yes you can use a premade mix. I like Snoqaulimie Falls Nutrarich from Salish Lodge.Salish Lodge in Washington State is well known for its breakfasts! I have used less expensive mixes like Hungry Jack and not had a problem with hearty eaters.








So don't worry about using a mix, we already cheated with microwave bacon cooker, right? HINT: A Super large griddle will make this breakfast a breeze to cook !


3. Prepare griddle (teflon is easiest). Swab surface of griddle or pan with a little bacon grease to prevent sticking and add flavor. Use a paper towel to distribute grease evenly. Look for thin coating not a puddle of the bacon grease.


HINT: A super large griddle like the presto griddle will make this breakfast a dream to prepare.


4. Pour thin layer of batter on skillet or griddle. Lay one piece of cooked bacon across the top. Pour another thin layer of batter over the bacon. Cook until edges show slight color change, with a turner, lift carefully to check for golden color under "cake". When golden -flip it. Cook until golden brown on both sides.


5. Place cooked pancake on platter and keep warm in low temp oven (covered with towel) until all the bacon pancakes are cooked. Serve with butter and maple syrup. Enjoy!
