Cook Muffins In A Cast Iron Muffin Skillet







Baking muffins in a cast iron muffin skillet was an familiar task for the homemakers of yesterday. Cast iron cooks evenly and distributes the heat for optimum baking results. If properly seasoned, cast iron skillets are virtually non-stick.


Instructions


1. Season the cast iron skillet, if it hasn't yet been property seasoned. To season, first wash the new skillet in hot soapy water, rinse and dry. Heat for several minutes at 300 degrees to completely dry the skillet. Rub about a tablespoon of vegetable oil over the surface of the pan using a paper towel. Heat the lightly oiled skillet at 300 degrees for an hour. Allow to cool before using.








2. Grease the inside of the muffin cups with butter. To do this, spread a little butter on a paper towel and wipe the interior of the muffin cups with the buttery paper towel.


3. Pour muffin batter into each muffin cup. Fill to ½ to 2/3 full.


4. Bake the muffins according to the recipe. Preheat the oven and place the skillet in the center of the oven. Don't overcook.


5. Instead of pouring the muffin batter into an unheated skillet (as per step 3) the skillet can be pre-heated in the oven for about 15 minutes before adding the batter. This takes several minutes off the suggested baking time and will produce muffins with a crustier exterior.
