Bake Peaches In Balsamic Vinegar

The sweetness of baked peaches is enhanced by balsamic vinegar.

Peaches are a sweet, delectable treat that when ripe can burst with all the flavors of summer. Right off the tree isn't the only way to have a peach, and if you don't believe you can make them even sweeter, try this recipe. Glazing the peaches in balsamic vinegar and baking them enhances the sweetness of the fruit and adds a nice glaze. The baking action reduces the balsamic coating and it is not vinegar-tasting at all. The result is a melt-in-your-mouth peach you will want to make again and again.

Instructions

1. Wash and halve the peaches, removing the pits. Remove the skin. You can slice the peaches into thick planks about 1/2-inch wide if desired, or leave them halved.

2. Place the peaches face-down on a baking sheet. Brush with a small amount of olive oil. Bake at 350 degrees for 15 to 20 minutes or until peaches are lightly browned and soft.

3. Remove the peaches from the oven. In a mixing bowl stir together the balsamic vinegar, pepper and sugar. Add the peaches and toss to coat. Allow the peaches to absorb the vinegar and serve.
