Baked Popcorn Chicken







Baked popcorn chicken is a healthy menu item that is lower in saturated fats than common in comparable foods fried in oil. Baked popcorn chicken is easy to make and can be served as part of a dinner, late night snack or even as a salad topper. Experiment with a variety of seasonings and spices to cater the dish to the preferences of the dinner, lunch or party crowd.


Instructions


1. Preheat the oven to 450 degrees Fahrenheit. The chicken can be baked using a traditional oven or convection setting.


2. Cut the chicken breast into small 1-inch to 1 1/2-inch cube pieces.


3. Pour the olive oil onto a large baking sheet and spread the oil to coat the entire pan. Alternatively, use an olive oil cooking spray and spray a thin layer over the pan.








4. Pour 2 cups of coarsely ground breadcrumbs onto a large pie plate.


5. Add the ½ cup of non-fat milk and the garlic powder, onion powder, paprika, chili powder and salt to a small mixing bowl then whisk the ingredients together.


6. Place four or five of the chicken cubes into the mixing bowl to coat the chicken with the mixture, then transfer the pieces to the breadcrumbs to thoroughly coat it.


7. Transfer the coated chicken cubes to the baking sheet and repeat the above steps to prepare the remaining cubes of chicken. Spray a light coating of olive oil spray over the coated chicken cubes to help the chicken crisp while cooking.


8. Place the baking sheet in the oven for approximately 15 minutes and then flip over the chicken cubes. Let the chicken continue to bake until the pieces turn a golden brown. This should take approximately five to 10 minutes more.
