Make A Low Fat Breakfast Casserole

When looking for low fat breakfast ideas that are not only good, but good for you, a low fat breakfast casserole is easy and delicious. To make this low fat breakfast, you must simply read the labels of your ingredients, Morningstar Farms makes fantastic breakfast sausage that is very low in fat. And Veggie Shreds makes shredded cheddar cheese that is also low fat. Egg beaters makes a fat free egg blend. Using these ingredients, you can make a great low fat breakfast casserole. Here's how!

Instructions

1. Preheat oven to 350. Use a fat free cooking spray to coat the bottom and sides of an 8 by 8 baking dish. Read through the labels of your low fat breakfast casserole ingredients to ensure it will not add up to too much fat. Each brand is different, so use your judgment.

2. Tear 4 or so slices of bread into bite sized pieces. You want a layer in the bottom of the baking dish about an inch thick. Add a layer of shredded hash brown potatoes covering bread pieces.

3. Dice the veggie sausage, about 2 pieces should be sufficient for your low fat breakfast. If you would like to add any diced vegetables to your low fat breakfast, such as diced green peppers or onions, do so now. Pour an 8 ounce container of Egg Beaters original evenly over casserole to coat.

4. Sprinkle the low fat breakfast casserole with Veggie Shreds shredded cheddar cheese. Veggie Shreds is a great low fat alternative to cheese, the flavor is great! Keep in mind, though, that it does not melt the same way regular cheddar cheese does.

5. Cover low fat breakfast casserole with foil and bake for about 40 minutes. Remove foil, and let brown slightly for about 5 or 10 more minutes. This recipe should serve about four people. Or less, if you're really hungry!
