Make A Mojo Fondue Melting Pot







Next time you're feeding half a dozen guests, consider one of the most popular dishes on national restaurant chain The Melting Pot's menu. Preparation is so fast, you'll be handing out fondue forks over a bubbling cauldron in record time. Mojo Fondue isn't just tasty; it's also a great dish to serve if you're cooking for folks on gluten-free diets. Try this recipe next time you're in a Caribbean state of mind and while you're getting your cooking mojo on, feel free to dig out your skimpiest swimsuit since this body-friendly meal won't heap on the pounds.


Instructions


1. Chop up the cilantro up and place it in a medium-sized sauce pan. Add the juices, broth and seasonings to blend.








2. Bring the mojo broth to a boil. Reduce the heat, simmer for 20 minutes and pour the liquids into a fondue pot.


3. Thoroughly wash zucchini, broccoli, cauliflower, mushrooms, peppers and other veggies of your choice and cut them into big chunks. If desired, prepare scallops, large shrimp, chicken chunks and other meats by cutting them into separable chunks.


4. Light a flame under the fondue pot. Bring the broth to a slow boil. Place the hot pot and plates of veggies, meats and seafood on the dining table and hand out the fondue forks for dipping.


5. Try variations of the Mojo Fondue by experimenting with these ingredients in addition to those on the ingredient list: Chopped onion, sliced fresh garlic, ¼-cup of rum, ¼-cup of brown sugar or add chunks of potatoes to your veggie tray. There's very little you can do to ruin this tasty, healthy dish, so have fun with it.
