Make Cucumber Tomato And Onion Salad

Combine fresh vegetables with sour cream for a quick salad.

This is a delicious Southern salad of cucumber, tomato and onion, with sour cream and seasoned salt. Keep the recipe light by using a low-fat sour cream. If you like, you can substitute Greek yogurt without losing the creaminess. This is a great way to use your bounty of fresh-from-the-garden produce.

Instructions

1. Slice the cucumbers, dice the tomatoes and slice or dice the onion. For a more rustic, hearty-looking salad, cut the cucumbers and tomatoes into chunks.

2. Toss the produce into a serving bowl.

3. Add sour cream and seasoned salt a little at a time, mixing as you go. Use enough to coat the vegetables and create the desired consistency. Season to taste and combine well.

4. Chill before serving, if desired, or serve immediately. This dish can be served on the side with a meal or as a light lunch or dinner on a hot day. Add a piece of homemade bread or a roll to round it out.
