Make Authentic Cuban Sandwiches







If Cuban bread is not available, use French bread instead.


The authentic Cuban sandwich is a hot sandwich with meats and cheeses cooked in a crusty bread. A traditional Cuban-style sandwich does not have lettuce, tomato or mayonnaise, but these can always be added to suit your taste. While the recipe calls for Cuban bread, French bread can be substituted in its place. To switch the recipe to a Cuban medianoche sandwich, follow the same ingredient list and process, but simply switch the crusty bread for a sweet bread, and you will have the perfect medianoche or "midnight" snack.


Instructions


1. Cut the Cuban bread into a 12-inch piece. Slice the bread so it lies open, but not far enough for it to separate into two pieces.








2. Spread enough mustard on both sides of the bread to suit your taste. Layer the three slices of ham, three slices of roast pork, three slices of Swiss cheese, four slices of pickles and four slices of onion on the bread. Season the sandwich with salt and pepper.


3. Close the sandwich, and spread the butter over both sides of the sandwich.


4. Heat the pan over medium heat for about a minute. Meanwhile, wrap the brick with the aluminum foil. Add the sandwich to the pan and press down with the brick to flatten the sandwich. Allow to cook for three minutes, or until the bread begins to brown, with the brick on top of the sandwich. Repeat the process on the reverse side.


5. Slice the sandwich in half diagonally and serve.
