Tuna And Green Bean Pasta Salad

Make a filling pasta salad using tuna and fresh vegetables.

While a lot of tuna pasta salad recipes call for peas, using green beans instead is a fresh take on a classic dish. Fresh green beans will give a creamy tuna pasta salad a crisp bite. Choose green beans at the peak of their flavor and use high-quality canned tuna for the best taste. Tuna pasta salads are tasty additions to casual meals and are substantial enough when served alone as a lunch or dinner.

Instructions

1. Boil 12 oz. of macaroni, corkscrew or rotini pasta for 8 to 10 minutes, or until they are "al dente." Drain the pasta in a colander over a sink and transfer it into a large mixing bowl. Allow the pasta to cool to room temperature.

2. Cut 1/2 lb. of fresh green beans into 1-inch-long pieces and boil them in salted water for 4 minutes. Drain the beans in the colander and rinse them with cool water. Add them to the bowl with the pasta.

3. Add 1 1/2 cups of mayonnaise, 1 12-oz. can of drained water-packed albacore tuna and 1 cup of halved, cherry tomatoes to the bowl of pasta and beans. Add salt and pepper, to taste.

4. Mix all the ingredients together using a spoon. Cover the pasta salad with plastic wrap and refrigerate it for 1 hour before serving.
