Make Fajitas







Classic Tex Mex fajitas consist of juicy strips of steak combined with colorful bell peppers and onions, all wrapped up in a warm tortilla. A bit of fresh jalapeno pepper will give the fajitas a little bit of firepower.


Instructions


1. Slice the sirloin steak into thin strips, cutting across the grain of the meat. Slice any long slices in half.


2. Place the strips in a zip close bag and add the jalapeno pepper and rice vinegar. Close the bag and turn it to make sure the meat is completely coated. Refrigerate the meat overnight or for at least 3 hours.








3. Remove the meat from the refrigerator and take it out of the bag. Discard the marinade.


4. Heat the canola oil in a heavy skillet over high heat and cook the meat for about 4 minutes, or until it's just barely pink in the middle. Move it to a plate and set it aside.


5. Place bell pepper strips. sliced thin, in the skillet with the onion and garlic and cook the mixture over high heat for 3 to 4 minutes or until the vegetables are slightly tender. Sprinkle Mexican seasoning or fajita seasoning over the top.


6. Put the cooked steak back in the skillet and cook just until they're heated through.


7. Spoon the fajita mixture into warm tortillas, and serve with salsa, sour cream or other toppings.
