Cheesy Casserole Potato Recipe


Cheesy potato casserole is an easy dish to prepare, particularly when you don't have much time. There is very little preparation required and a complete meal can be created by serving with a green salad. This recipe yields approximately eight servings of cheesy potato casserole that even the pickiest of eaters is likely to enjoy.


Instructions


1. Take the bag of frozen potatoes out of the freezer and place the unopened bag into a large mixing bowl. Allow it to thaw for about 30 minutes. Spray a 9-by-13-inch baking pan lightly with nonstick cooking spray.








2. Open the bag of potatoes and empty it into the mixing bowl. Add a can of cream of mushroom soup, 2 cups of sour cream, 1 cup of shredded cheddar cheese and two chopped green onions.


3. Season the mixture with salt and pepper, about 1 tsp. each, and stir well to combine using a rubber spatula. Use more or less seasoning, depending on your personal taste.


4. Pour the cheesy casserole potato mixture into the prepared baking pan. Top with an additional cup of shredded cheddar cheese, 2 cups of crushed cornflakes and 2 tbsp. melted butter. Preheat the oven to 350 degrees F.


5. Place the pan in the oven and bake for approximately 45 minutes, or until the cheesy potato casserole is golden brown and bubbly. Remove from the oven and allow the casserole to cool for 5 to 10 minutes before serving.
