Make Low Carb "Crackers"

These little crackers turn out looking like a commercial cheese cracker, and the taste is similar too. It takes a bit of practice and every microwave oven is different, but the instructions allow for that. The crackers can be made in advance and kept in plastic zip bag in a refrigerator. The cold air will give the "crackers" a crisp consistency.


Instructions


1. Cut the parchment paper to fit on the plate. A dinner plate will work just fine, as will a microwave bacon cooker.








2. Fold each piece of cheese in half, then in half again, and two more times until you have 16 small pieces of cheese.


3. Lay the pieces of cheese out evenly on the parchment paper on the plate.


4. Bake in the microwave for about 1 minute. Microwave them a shorter time if you don't prefer crispy crackers.


5. Remove the cookies from the microwave and let them stand for 30 seconds. The cookies should easily peel off the parchment paper and are ready to eat.
