Cook A Light Easter Brunch

Cooking a light Easter brunch for your friends and family is easy.


Holidays like Easter, Thanksgiving and Christmas center around the family, and most family events include food. Creating a light Easter brunch for family and friends is simple. One simple, fast brunch that works perfectly for Easter is Eggs Benedict, roasted potatoes and fruit salad. The meal is healthy and tastes great. Serve it as a buffet or a seated brunch, and enjoy.


Instructions


Eggs Benedict


1. Split one English muffin for each person. Toast the muffins in the oven or toaster.


2. Put a slice of Canadian bacon on top of each muffin half. Place each muffin half on a large baking pan.


3. Fill a 5-quart pot about 3/4 full of water, and add 2 tsp. salt. Bring the water to a full boil. Let the water cool to 180 degrees, then crack an egg, and drop it in the boiling water. Cook it for three to four minutes, and remove it with a slotted spoon.


4. Set the egg on a plate with a paper towel on it so it drains off the excess water. Place the drained poached egg on top of the Canadian bacon.


5. Measure 1/3 cup of sour cream, and put it into a sauce pan. Add 1/3 cup salad dressing, 1 tsp. mustard and 2 tsp. lemon juice. Put the pan on the stove, and heat it at low heat until it is warm. If the sauce is too thick, stir a tablespoon of milk into the sauce.


6. Top each poached egg with a tablespoon of sauce. Sprinkle pepper across the top of each Eggs Benedict, and serve hot.


Roasted Potatoes


7. Mix 1 tbsp. olive oil, 2 tbsp. of Italian seasoning, 1 tsp. salt, 1/2 tsp. black pepper, 4 tbsp. Italian dressing together in a large bowl.


8. Cut the potatoes in half, and sit them in a casserole dish. Pour the spice and Italian dressing mixture over the potatoes.


9. Bake in a casserole dish at 425 degrees about 45 minutes or until tender. Remove from the oven.


Fruit Salad


10. Peel bananas, oranges and apples. Cut the fruit into bite-size pieces.


11. Remove the leaves from strawberries, and cut the strawberries into small pieces. Wash grapes and remove them from the stems.


12. Put all ingredients into a bowl, and stir together. Mix 1/4 cup of lemon juice with 1 tbsp. sugar, and mix it into the fruit. The lemon juice and sugar keeps the fruit from turning brown.
