Remove Grease From Soup







Prepare soup the night before to degrease it fully.


Greasy soup indicates that the dish contains high amounts of fat. For those keeping an eye on their fat and calorie intake, and for those who prefer a soup with less of an oily taste, removing grease from soup becomes necessary. A degreased soup also has an aesthetically pleasing clear appearance rather than being clouded with excess fat. Prepare your soup the night before to best remove the grease from it.


Instructions


1. Cook the soup according to its recipe. Remove the soup from the heat and allow to cool to room temperature.








2. Lay a single paper towel flat on the surface of the soup, holding the two opposite corners to prevent it from sinking.


3. Lift the paper towel from the soup and discard. Repeat with several more paper towels until you no longer see fat globules on top of the soup.


4. Refrigerate the soup overnight to completely chill it and to allow any remaining fat to rise to the surface.


5. Spoon the opaque fat from the surface of the soup with a slotted spoon or skimmer before reheating and serving the soup.
