Marinate Feta







Marinated feta cheese adds another level of flavor to salads and sides.


Feta cheese, a staple of Greek cuisine, is a brined cheese made from sheep and goat milk. More than 40 percent of Greece's cheese consumption consists of feta cheese, according to Cornell University, but it is also popular around the world. A common preparation method in many countries consists of marinating the cheese in a mixture of herbs and spices. Marinated feta cheese adds a refreshing tang to any dish. Try marinating the cheese the night before serving to give the flavors plenty of time to become established.


Instructions


1. Remove the feta from its packaging. Hold the cheese under cold, running water for about 10 seconds, turning to rinse all sides. Transfer to a cutting board and pat dry with paper towels.








2. Cut the feta cheese into 2- to 3-inch cubes with a sharp kitchen knife. Transfer the cubes to a large bowl and set aside.


3. Combine the dried oregano, fresh thyme, chopped garlic, lemon juice, olive oil and black pepper in small mixing bowl. Stir until the ingredients are mixed well.


4. Pour the marinade over the feta cheese cubes, and toss to coat all pieces thoroughly. Cover the bowl and refrigerate for at least one hour. The longer the mixture stands, the more of the flavor the cheese will absorb.


5. Remove the bowl from the refrigerator and allow the marinated feta cheese to stand at room temperature for about 30 minutes before serving or using in recipes for the best results.
