What Is Goose Liver Sandwich Meat?


Liverwurst is a traditional sandwich sausage made of pork liver; one way to elevate the elegance of a liverwurst sandwich is to use goose liver pate or fois gras entier rather than pork.


Gaenseleberwurst


Goose liver pate, or gaenseleberwurst, is a creamy puree made of goose liver and goose meat.


Fois Gras Entier


Also referred to as "foie gras entier," this delicacy is goose liver that has been lightly cooked. Foie gras entire is rich in flavor but more delicate and creamy than duck liver. Depending on the brand, it may or may not include chunks of goose liver.

Both gaenseleberwurst and foie gras entier should be refrigerated and then served on crusty bread, such as French bread or brioche.
