Cucumber Vinegar Dill Salad







Use cucumbers to make a delicious summer salad.


Celebrate summer with a refreshing cucumber, vinegar and dill salad. If you have a garden, the salad is an ideal way to put an abundance of cucumber and dill to good use. The salad, which is served chilled, makes a light, fresh side to grilled fish and chicken dishes. The tasty salad is sure to please family members or summer party and picnic guests. The sweet and sour vinegar dressing and savory herb flavor complements the crunchy cucumbers well in this dish.


Instructions








1. Peel three cucumbers using a vegetable peeler. Cut the cucumber into thin slices width-wise using a sharp knife. Slice a red onion into thin rings. Place the cucumber and onion slices into a colander and sprinkle them with 2 tsp. of sea salt.


2. Set a bowl under the colander and allow the vegetables to drain in a refrigerator for one hour to remove excess moisture. Rinse the vegetables with cool water to remove the salt.


3. Pour the cucumber and onion slices into a large mixing bowl. Add 1 tbsp. of white granulated sugar, 2 tbsp. of chopped fresh dill and 2 tbsp. of white distilled, cider or red wine vinegar, depending on your tastes, to the bowl.


4. Stir the ingredients together. Add salt and black pepper to taste. Cover the bowl with plastic wrap and chill the salad in a refrigerator for one hour prior to serving.
