A mango and coconut cocktail is the quintessential summer drink, perfect for outdoor pool parties, backyard barbecues and simple summer get-togethers. Low in alcohol content, mango and coconut cocktails are also excellent for casual work gatherings when you don't want your guests or yourself to consume too much alcohol. This recipe makes two individual drinks, but you can easily multiply it and make pitchers for a large group if you need to, as long as you keep the drinks ice cold until you are ready to serve them.
