Make Roses From Melted Chocolate

Surprising a loved one with chocolate roses is a special, and delicious, way to show you care. This treat is made by combining melted chocolate and corn syrup to create a chocolate modeling clay that can be shaped into flower petals. These roses can be used to decorate cakes and other pastries, or even attached to wire stems.

Instructions

1. Melt the chocolate chips in a double boiler until the chocolate it smooth. Pour the chocolate into a glass bowl and add the corn syrup. Blend with a rubber spatula.

2. Line a cookie sheet with wax paper. Pour the chocolate mixture onto the cookie sheet, smoothing it with the rubber spatula. Top the chocolate with another sheet of wax paper and refrigerate overnight.

3. Pull up the top layer of wax paper and slice the chocolate into 10 squares. Peel up the squares and roll each into a small ball. Place the balls on a sheet of wax paper. Place another sheet of wax paper on top of the balls and squish the balls into quarter-sized circles.

4. Peel up a circle and curl it into a cone shape, making it narrow on the top and wider on the bottom. Pick up another circle and, attaching it to the wider base, wrap it around the cone. This is the first petal of the flower and should stick out slightly. Pick up another circle and do the same to complete the rosebud.

5. Continue attaching circles to the rosebud in layers until all 10 are attached. Gently coax the petals outward until the flower resembles a rose in bloom. Sprinkle with sparkly white sugar, if desired. Use the roses to decorate a cake or attach them to florist wire to give as a gift.
