Make Osso Buco







Osso buco is a traditional Italian stew made with herbs, vegetables, and veal shanks. In fact, in Italian, osso buco means "hollow bone." Although veals shanks aren't generally considered to be a prime cut of meat, slow simmering in vegetables and spices turns them into a delicious, succulent dish.


Instructions


1. Heat the olive oil in a deep skillet. Dip the veal shanks lightly in flour and cook them in the hot oil until they turn golden brown, about 12 to 14 minutes. Turn them once halfway through the cooking time.


2. Remove the cooked veal shanks from the skillet and put them in a large bowl. Turn the heat to medium low, put the garlic and onion in the skillet and cook them for about 4 minutes, until they're tender.


3. Put the veal shanks back in the skillet and sprinkle them with salt and freshly ground black pepper. Add the wine, chicken broth, drained beans and tomatoes,


4. Cover the skillet loosely and simmer for about 2 hours until the meat begins to fall off the bones.


5. In a separate bowl, mix 2 minced garlic cloves, 1/2 tsp. lemon peel and minced parsley. Sprinkle the mixture over individual bowls of hot osso buco and serve.
