Make Sweet Potato Peanut Balls







Sweet potatoes are healthy they provide vitamins A,C Iron and Calcium to your diet.


Sweet potatoes, peanut butter and molasses are all healthy ingredients. Combined in this recipe, they make a traditional treat that is filled with vitamins, protein and minerals. This simple six ingredient combination makes a unique dessert that will complete a holiday meal and be sure to impress your guests.


Instructions


1. Preheat oven to 375 degrees.


2. Wash, peel and quarter 4 sweet potatoes, place in stock pot, bring to a boil and reduce heat to medium. Boil for 20 minutes or until thoroughly cooked. Drain by pouring into a colander. Mash in a mixing bowl while still warm.


3. Mix the peanut butter into the mashed sweet potatoes.


4. Beat egg in a small bowl, using fork or whisk.


5. Pour beaten egg, brown sugar and molasses into the sweet potato and peanut butter mixture. Stir until thoroughly mixed.


6. Crush corn flakes by putting in a baggy or between 2 layers of wax paper. Roll a rolling pin over the flakes until crushed.


7. Shape sweet potato mixture into 12 balls.


8. Pour crushed corn flakes onto a plate. Roll the balls, one at a time, in the flakes until coated.


9. Place balls evenly on a greased cookie baking sheet.


10. Bake in oven for 15-20 minutes.
