Peel Green Chilies

Char green chilies to peel them.

Before you can cook with fresh green chilies, remove the skins to ensure tender and tasty peppers perfect for any savory recipe. Take care as you handle fresh chilies; they have a burning bite that can result in painful burns on your skin, in your eyes or in mucous membranes. Wear plastic gloves to protect your hands and peel green chilies using a special preparation method. The skins will slide right off the peppers with minimal effort.

Instructions

1. Place the chili peppers into the colander and wash under cool water.

2. Transfer the chili peppers to the baking dish.

3. Preheat the oven broiler to 500 degrees Fahrenheit and place the chili peppers under the broiler, approximately 3 inches below the heat.

4. Leave the peppers under the broiler for about six minutes, turning them with tongs every minute to ensure even charring.

5. Remove the baking dish from the oven and transfer the peppers to the plastic bag. Seal the bag and leave the peppers sitting for 15 minutes.

6. Open the bag after the time elapses and pour the chili peppers back into the colander. Rub the chili peppers briskly under cool running water to remove the skins. Try rubbing them with a clean cloth as you run the water over the peppers.
