Make Goat Cheese Dumplings


Goat cheese dumplings are a great way to dress up your everyday dumplings. They are delicate, tasty, easy to make and can be served in a variety of ways. Try adding them to soups or broths, or slather them with butter and serve them as a main dish. This recipe yields approximately four servings of goat cheese dumplings.


Instructions


1. Fill a large stock pot about halfway with water. Add 1 tbsp. of salt and stir. Bring the water to a rolling boil.


2. Add 2 cups cubed goat cheese, two large eggs and 1 tbsp. each dried parsley, tarragon and thyme to a large mixing bowl. Add a dash of salt and pepper and stir well to combine.


3. Add 1/2 cup of all-purpose flour to the goat cheese mixture, and stir again to combine. Add an additional 1/4 to 1/2 cup of flour, stirring in a few tablespoons at a time, until a thick dough is formed.


4. Turn the dough out onto a lightly floured surface and knead for about two minutes. Pinch off small 1- to 2-inch pieces of the dough and form them into balls. Place each of the goat cheese dumplings onto a piece of wax paper, a few inches apart.


5. Add three to four dumplings at a time to the boiling water. Allow them to boil for two to three minutes, or until they float to the top of the water. Once they float, allow them to cook for an additional one minute.


6. Remove the dumplings from the water with a slotted spoon, once done. Continue cooking in batches of three or four goat cheese dumplings at a time until. Serve immediately.
