Make Baked Sweet Potato Fries

Sweet potato fries are showing up on menus at a number of restaurants. Even those who aren't normally fans of sweet potatoes are finding the seasoned side dish appealing. Baked sweet potatoes are high in fiber, vitamins A and C, and potassium -- but your kids don't have to know how healthy they are. Give them a creative name, or just call them fries, and watch as reluctant veggie-eaters are won over by the sweet taste.

Instructions

1. Heat oven to 450 F. Wash the sweet potatoes and slice into long spears.

2. Spray a baking sheet with cooking spray or pour on a little olive oil.

3. Arrange the fries in a single layer on the oiled pan. Spritz on more cooking spray or brush on a little more olive oil. Sprinkle on garlic powder, salt and pepper.

4. Cook for 20 minutes, turning partway through so they cook evenly. Thin-cut fries may cook faster, so keep eye on them to avoid burning. Thick fries may need a few extra minutes in the oven.
