Make Vegan Christmas Cookies

Just because you're vegan doesn't mean you have to pass on Christmas cookies. It's easy to substitute vegan-friendly ingredients.

Instructions

1. Sift flour, baking powder and salt over a dry bowl.

2. Cream the vegan margarine or shortening with the sugar until soft. Add the egg replacement and extract, if you're using it, and stir well.

3. Stir in the flour, baking powder and salt mixture gradually.

4. Add the substitute milk slowly. Mix well to eliminate lumps. Add more milk if the dough feels too dry.

5. Use the fork to massage the dough. The dough should be flexible enough to work with your fingers but still maintain its shape. Add milk if it's too hard, flour if it's too drippy.

6. Preheat the oven to 350 degrees and grease 2 cookie sheets. Have fun shaping the dough into Christmas symbols, circles, animals, flowers and anything else you can think of.

7. Place your vegan Christmas cookies on the greased cookie sheets and bake for 10 minutes or until firm.
