Make Fried Corn Bread







Corn bread is a popular side dish, especially in the South. In the Southwest, corn bread comes with jalapenos inside, while in the Southeast, the bread is sweet and served with honey. Try frying corn bread in patties for individual servings. The crisp corn patties are inexpensive and easy to make.


Instructions


1. Sift the corn meal into a fine powder.


2. Boil 2 to 3 cups of water in a small saucepan over a high heat.


3. Mix the corn meal, baking powder, flour, salt and bacon grease until combined.


4. Continue stirring and add the boiling water until the mix is thick and mushy. All of the boiling water does not have to be used.


5. Scoop out a handful of the mush and use your hands to form small patties.


6. Pour 1/2-inch of oil into a skillet and place over medium heat. When the oil is hot, fry each side of the corn bread patty to a crispy brown. Another option is to use a deep fryer instead of a skillet.


7. Remove the patties from the oil. Drain on a paper towel and serve.
