The cuisine of the Southern United States is often written off as unsophisticated mushy greens and dry cornbread. Take a new look at Southern food with some suggestions for a good down-home Southern meal.


Shrimp and Grits


Grits and polenta are very similar, both acting as a great starch vehicle for a protein. Try adding some shrimp to cheese grits for a simple Southern supper from the Carolinas.


A Twist on Greens


Many people do not like their greens cooked long and slow, so try a twist on greens by steaming them in a skillet. Chopped greens can be steamed by adding them to a hot covered skillet with a cup of broth.








Hominy and Cheese Casserole


Hominy is corn plumped up and softened with lye, making it soft, white and chewy. Try using hominy instead of rice in a rice and cheese casserole for a Southern twist.


Fried Chicken


To make tasty fried chicken, always use fresh oil, keep the skin on the chicken and eat soon after frying. Legendary Southern chef Scott Peacock always brines his chicken first before soaking it in buttermilk, coating it in a mixture of cornmeal and flour, and frying it in butter and lard.


Southern Desserts


To crown your Southern meal, try a traditionally Southern dessert, such as pecan, sweet potato, or lemon chess pie or hummingbird cake.
