Baked Chicken Marinara







Serve baked chicken in marinara sauce atop a bed of hot pasta.


Baked chicken marinara is a delicious and satisfying meal to serve on any occasion. Juicy chicken pieces are coated in a flavorful breading and baked in a savory marinara sauce. Serve the spicy Italian-style baked chicken alone or on top of hot pasta, such as penne, spaghetti or linguini. The dish's red sauce makes it a festive Christmas or Valentine's Day meal, but you can make it to please your family on an ordinary weeknight as well.


Instructions


1. Mix together 3/4 cup seasoned breadcrumbs and 3/4 cup grated Parmesan cheese in a bowl. Place 2 beaten eggs in one small bowl and 1/2 cup all-purpose flour in another.


2. Heat 4 tbsp. olive oil or butter in a large non-stick skillet over medium-high heat. Dip 9 boneless chicken breasts into the beaten egg and coat them first with the flour and then with the breadcrumbs. Place the breaded chicken breasts in the skillet and cook for four minutes on each side.


3. Arrange the fried chicken in a baking dish. Pour 1 24-oz. bottle of marinara sauce over the chicken. Or make your own sauce by combining 28 oz. crushed tomatoes, 4 sauteed garlic cloves and fresh oregano and basil and simmering the ingredients in a saucepan.


4. Preheat an oven to 350 degrees Fahrenheit. Top the chicken marinara with 1 cup shredded mozzarella cheese. Bake the chicken for 15 minutes or until the cheese is melted; an instant-read food thermometer should read 170 degrees Fahrenheit when inserted into the thickest chicken breast.
