Make Fish Cakes







Fish is full of natural oils that strengthen the heart and may reduce cholesterol. However, getting small children to eat fish or coming up with creative recipes can require some pondering. If you are looking for a new way to prepare an old favorite, delicious fish cakes are simple to make.


Instructions


1. Scrub, peel and boil the potatoes. Once soft, strain the water and mash the potatoes until creamy.








2. Poach 1 pound of your favorite fish in a shallow pan or a frying pan. Keep the fish whole and don't allow the water to come to a boil. The fish is done when you can flake pieces off easily.


3. Drain the excess water from the fish and carefully remove the bones and skin. Add the cooked fish to your mashed potatoes. Salt to taste and gently fold the fish into the potatoes. Taste the mixture and add extra salt or seasonings if needed.


4. Place the potatoes and fish in the refrigerator until chilled, which will help to hold your finished cakes together. Once chilled, form the mixture into cakes.


5. Fry your finished fish cakes in hot oil, cooking for 4 or 5 minutes on each side. Serve with your favorite sauce.
