Make Cheesy Potato Wedges







Select fresh potatoes without any root growth on their skin.


Potato wedges are similar to thick French fries, with a crispy exterior and a fluffy interior. Potato wedges are a simple snack or side dish you can make at any time. Make cheesy potato wedges as a variation of the classic recipe. The soft flavor of Parmesan cheese combines with the rich flavor of cheddar cheese to complement the taste of seasoned potatoes. Begin preparing the wedges approximately 45 minutes prior to mealtime.


Instructions


1. Preheat the oven to 425 degrees Fahrenheit.


2. Rinse 6 unpeeled potatoes with cool water and scrub their exterior with a clean sponge. Slice the potatoes in half lengthwise with a sharp knife. Cut the potato halves into six wedges each.


3. Fill a pot large enough to hold six potatoes with water. Add the salt and bring to a boil over medium heat.


4. Place the potato wedges into the pot of boiling water and ook for 8 minutes. Drain away the water and pat each wedge dry with a paper towel.


5. Dip your fingers into olive oil and rub the exterior of each wedge, coating it in a thin layer.


Combine the pepper, oregano and thyme in a small bowl. Sprinkle the mixture over all of the wedges.


6. Arrange the wedges onto a baking sheet and place into the oven. Bake for 15 minutes.


7. Sprinkle the Parmesan cheese over the potato wedges. Top the Parmesan cheese with a light sprinkling of cheddar cheese and place back in the oven. Bake for an additional 15 minutes.


8. Remove the wedges from the oven and cool for five minutes before serving.
